American Kobe Style Rib-eye
- 1.6 kls. rib-eye or tenderloin
- ¼ cup mixed herb rub:
- Parsley
- Thyme
- Oregano
- Garlic
- Paprika
- Olive oil
Cooking Procedure:
- Season steak with the mixed herb rub.
- Grill according to desired doneness.
- Serve with Hollandaise sauce.
Hollandaise Sauce
- 3 egg yolks
- 2 teaspoons mustard
- Pinch of cayenne pepper
- ½ cup melted butter
- 1 tbs. lemon juice
- Salt and pepper to taste
Procedure:
- Whisk egg yolks, mustard and cayenne pepper into a double boiler.
- Add melted butter slowly until well-emulsified.
- Add lemon juice.
- Season with salt and pepper.
