Appetizer: Beef Potato Topper Recipe

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 medium onion, cut into wedges
  • ½ cup green pepper, cut into 2inch long strips
  • ½ lb boneless beef round steak, cut into very thin strips
  • 1 can Campbell’s condensed cream of  mushroom soup
  • ¼ cup water
  • 2 tsp lime juice
  • ½ tsp dried oregano leaves, crushed
  • ¼ tsp ground cumin
  • 4 hot baked potatoes, split
  • Salsa or taco sauce

Preparation:

1.      In 10-inch skillet over medium heat, in hot oil, cook onion and green pepper until browned and tender.

2.      Push vegetables to one side, add beef; cook until browned.

3.      Stir in soup, water, lime juice, oregano and cumin.

4.      Heat through, stirring occasionally.

5.      Spoon mixture over potatoes.

6.      Top with salsa
