Chicken Croquettes
- 4 pcs. Medium potatoes, wash, boiled, peeled and smash.
- ½ tsp. salt
- ¼ tsp. pepper
- 2 pcs. eggs, beaten
- 250 grms. Can chicken chunks, shredded, heated in pan
- 2 cups breadcrumbs
- Cooking oil for deep frying
- ½ tsp. salt
- 2 cups all purpose flour
Procedure:
- In a mixing bowl, combine the mashed potatoes, salt and pepper.
- Mix well using wooden spoon or spatula. Set aside.
- In a separate bowl, combine salt and flour. Set aside.
- Dust your hand with flour. Place 1 tbsp. of potato mixture in your hands and flatten in your palms. Make an elongated well in a center.
- Place 1 tbsp. of chicken in the well.
- Fold to seal the potato into a log shaped croquette.
- Dredge in flour mixture.
- Dip in beaten eggs.
- Coat well in breadcrumbs. Chill overnight.
- When ready to cook, heat the oil in pan. Deep fry the croquettes until golden brown.
- Drain on paper towels or strainer.
