Chicken Croquettes

Ingredients:chicken croquettes

  • 4 pcs. Medium potatoes, wash, boiled, peeled and smash.
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 pcs. eggs, beaten
  • 250 grms. Can chicken chunks, shredded, heated in pan
  • 2 cups breadcrumbs
  • Cooking oil for deep frying
  • ½ tsp. salt
  • 2 cups all purpose flour



  1. In a mixing bowl, combine the mashed potatoes, salt and pepper.
  2. Mix well using wooden spoon or spatula.  Set aside.
  3. In a separate bowl, combine salt and flour.  Set aside.
  4. Dust your hand with flour.  Place 1 tbsp. of potato mixture in your hands and flatten in your palms.  Make an elongated well in a center.
  5. Place 1 tbsp. of chicken in the well.
  6. Fold to seal the potato into a log shaped croquette.
  7. Dredge in flour mixture.
  8. Dip in beaten eggs.
  9. Coat well in breadcrumbs.  Chill overnight.
  10. When ready to cook, heat the oil in pan.  Deep fry the croquettes until golden brown.
  11. Drain on paper towels or strainer.
