Chocolate Pie in a Date

Ingredients:chocolatepie

  • 2 cups sugar
  • 4 eggs, separated
  • 5 tbsps. flour
  • 5 tbsps. cocoa
  • 2 cups milk
  • 2 tsps. Vanilla
  • 2 tbsps. butter or margarine, melted
  • 9-inch baked pie shell
  • ¼ tsp. cream of tartar
  • 6 tbsps. sugar

Procedure:

  1. In sauce pan, beat together 2 cups sugar and egg yolks; stir in flour and cocoa.
  2. Add milk, vanilla and butter; mix well.
  3. Cook over medium heat, stirring constantly, until thick, about 20 minutes.
  4. Pour into baked pie shell; cool
  5. In a bowl, beat egg whites until frothy, and cream of tartar and beat until stiff.
  6. Gradually add sugar and beat until meringue is glossy and stiff.
  7. Spread meringue on cooled pie filling, sealing meringue to edge of crust to prevent shrinking.
  8. Baked in preheated oven at 425° until top is slightly browned, 5-6 minutes.
  9. Cool completely.
