Chocolate Pie in a Date
- 2 cups sugar
- 4 eggs, separated
- 5 tbsps. flour
- 5 tbsps. cocoa
- 2 cups milk
- 2 tsps. Vanilla
- 2 tbsps. butter or margarine, melted
- 9-inch baked pie shell
- ¼ tsp. cream of tartar
- 6 tbsps. sugar
Procedure:
- In sauce pan, beat together 2 cups sugar and egg yolks; stir in flour and cocoa.
- Add milk, vanilla and butter; mix well.
- Cook over medium heat, stirring constantly, until thick, about 20 minutes.
- Pour into baked pie shell; cool
- In a bowl, beat egg whites until frothy, and cream of tartar and beat until stiff.
- Gradually add sugar and beat until meringue is glossy and stiff.
- Spread meringue on cooled pie filling, sealing meringue to edge of crust to prevent shrinking.
- Baked in preheated oven at 425° until top is slightly browned, 5-6 minutes.
- Cool completely.
