Date Nut Cake
- 1 pound graham crackers
- 1 ½ c. English walnuts
- 1 tsp. salt
- 1 cup sugar
- 1 tsp. baking powder
- 4 eggs, beaten
- 1 ½ c. milk
- 1 tsp. vanilla
- 1 lb. pitted dates, halved
Procedure:
- Shred crackers and walnuts into large mixing bowl.
- Add salt, sugar and baking powder. Mix well.
- Add eggs, milk and vanilla and mix well. Stir in dates.
- Mix well and pour into pudding pan. Place pan on top of Utility Rack over one inch hot water in pan.
- Cover with dome cover. Cook over medium heat for 15 minutes.
- Reduce heat to low and cook for one hour or until toothpick inserted in center comes out clean.
