Glazed Lemon Carrots

Ingredients:glazed carrots

  • 1 pound small carrots, cut into 2-inch pieces
  • ½ c. butter
  • 1 tbsp. minced onion
  • ¾ c. light brown sugar
  • ¾ tsp. grated lemon rind juice of one lemon

Procedure:

  1. Clean and rinsed carrots; place in sauce pan.  Cover.
  2. Cook over medium-low heat for 20-30 minutes.
  3. In sauce pan, over low heat, sauté onion in butter until golden.
  4. Stir in brown sugar, grated lemon rind and lemon juice; heat until sugar dissolves.
  5. Pour sauce over carrots at least 5 minutes before serving; stir to coat all carrots.
