Glazed Lemon Carrots
- 1 pound small carrots, cut into 2-inch pieces
- ½ c. butter
- 1 tbsp. minced onion
- ¾ c. light brown sugar
- ¾ tsp. grated lemon rind juice of one lemon
Procedure:
- Clean and rinsed carrots; place in sauce pan. Cover.
- Cook over medium-low heat for 20-30 minutes.
- In sauce pan, over low heat, sauté onion in butter until golden.
- Stir in brown sugar, grated lemon rind and lemon juice; heat until sugar dissolves.
- Pour sauce over carrots at least 5 minutes before serving; stir to coat all carrots.
