Graham Cake

Ingredients:

  • 1 box (16 ounces) graham crackers
  • 2 tsps. Baking powder
  • 2 eggs
  • 2 cup milk
  • 2/3 cups chopped dates
  • 2/3 cups chopped nuts
  • 3 cups water
  • Whipped cream (optional)

Procedure:

  1. Cut crackers into crumbs.  Stir in baking powder.
  2. Beat eggs and milk; add crumb mixture. 
  3. Chop dates and nuts, stir into crumb mixture.
  4. Pour into greased pudding pan. 
  5. Place water in pan; place pudding pan on utility rack and set in pan over water. Cover; cook 15 minutes over medium heat.
  6. Reduce heat to low and cook an additional 60 minutes.
  7. Serve with sauce.

Health Cake Sauce

 

Ingredients:

  • 1 c. sugar

  • 1 tbsp.  cornstarch

  • 1 cup water

  • Juice of 1 lemon

  • 1 tsp. vanilla

 

Procedure:

  1. In a sauce pan, dissolve sugar and cornstarch in water; bring to boil and cook until clear.
  2. Remove from heat; and lemon juice and vanilla.
  3. Spoon over cake.
