Graham Cake
Ingredients:
- 1 box (16 ounces) graham crackers
- 2 tsps. Baking powder
- 2 eggs
- 2 cup milk
- 2/3 cups chopped dates
- 2/3 cups chopped nuts
- 3 cups water
- Whipped cream (optional)
Procedure:
- Cut crackers into crumbs. Stir in baking powder.
- Beat eggs and milk; add crumb mixture.
- Chop dates and nuts, stir into crumb mixture.
- Pour into greased pudding pan.
- Place water in pan; place pudding pan on utility rack and set in pan over water. Cover; cook 15 minutes over medium heat.
- Reduce heat to low and cook an additional 60 minutes.
- Serve with sauce.
Health Cake Sauce
Ingredients:
- 1 c. sugar
- 1 tbsp. cornstarch
- 1 cup water
- Juice of 1 lemon
- 1 tsp. vanilla
Procedure:
- In a sauce pan, dissolve sugar and cornstarch in water; bring to boil and cook until clear.
- Remove from heat; and lemon juice and vanilla.
- Spoon over cake.
