Pineapple Upside Down Cake
- ½ cup butter or margarine
- ½ cup brown sugar
- 1 can (20 ounces) sliced pineapple
- 2 small packages (9 ounces each) yellow cake mix
- 2 eggs, beaten
Procedure:

Melt butter in pan over low heat.

Add brown sugar; mix well.

Drain pineapple reserving ¾ cup juice; arrange pineapple in pan.

Combine cake mix, eggs and reserve juice.

Increase heat to medium; pour cake batter over pineapple. Cover, cook 8 minutes.

Reduce heat to low; cook until cake tests done.

Immediately remove cake from pan by inverting pan onto serving platter.
