Pineapple Upside Down Cake

Ingredients:pineapple-upside-down-cake

  • ½ cup butter or margarine
  • ½ cup brown sugar
  • 1 can (20 ounces) sliced pineapple
  • 2 small packages (9 ounces each) yellow cake mix
  • 2 eggs, beaten

 

Procedure:

  1. Melt butter in pan over low heat.
  2. Add brown sugar; mix well.
  3. Drain pineapple reserving ¾ cup juice; arrange pineapple in pan.
  4. Combine cake mix, eggs and reserve juice.
  5. Increase heat to medium; pour cake batter over pineapple.  Cover, cook 8 minutes.
  6. Reduce heat to low; cook until cake tests done.
  7. Immediately remove cake from pan by inverting pan onto serving platter.
