Special Bicol Express

Ingredients:bicol express

  • ¼ c. cooking oil
  • 1 tbsp. chopped garlic
  • ½ c. chopped onions
  • ¼ c. chopped fresh ginger
  • 2 tbsps. turmeric
  • 1 k. pork cooked and sliced into ½” strips
  • 1 ½ tbsp. chopped hot chili
  • 1 ½ c. bagoong (alamang)
  • 6 c. coconut cream
  • 2-3 c. fresh hot green pepper sliced diagonally ¼” strips
  • 1 ½-2 c. fresh red hot peppers sliced diagonally ¼” strips
  • 1 tsp. MSG (aji-no-moto)

 

Procedure:

  1. Saute garlic in hot oil. Add onions and cook till translucent.
  2. Stir in fresh ginger and dilao and the sliced cooked pork.
  3. Stir continually for 5 minutes.
  4. Add bagoong alamang and chopped hot chili, (siling labuyo).
  5. Stir till the pork is completely covered by mixture. (about 15 minutes.)
  6. Pour-6 c. coconut cream and add the sliced hot green and red peppers.
  7. Continue cooking for about 20 minutes. Add the aji-no-moto and correct seasoning. Add salt if necessary.
